Caprese cake

Capri is beautiful Mediterranean island, an amazing destination for tourists. The origin of this cake is not known for sure, but the most common story tells that an baker forgot to put flour in his chocolate cake, the tourists loved the new rich dessert and now we have this great cake.
There are few different recipes for Caprese cake but I love this one. It’s fast, simple, so rich and tasty. This recipe actually has some flour in it…

Caprese cake

  • 3 eggs
  • 150g of sugar
  • 150g of dark chocolate
  • 150g of butter, unsalted
  • 80g of flour
  • 200 g of almonds (or any other nuts)

In a pan over the boiling water, melt butter and add chocolate.

Stir until well incorporated,
than add sugar and stir until it melts.
Chop almonds and other nuts (here, I’ve used almonds, walnuts and hazelnuts)
Mix the eggs until fluffy (I mix egg whites first, than add egg yolks).
Add the butter and chocolate sauce in the eggs.
Add flour and mix it with chopped nuts. Add that mixture in eggs.

Line a round pan with parchment paper. Pour the batter and bake at 160-170 degrees for 40-45 minutes.

The top will be cracked and hard but the middle is soft and moist. And it’s delicious…

I have a recipe for another cake named “Capri cake”. It has nothing to do with this one, but it’s  amazing and it is just the right one to share at the beginning of the spring 🙂
